THERE’S NOTHING QUITE LIKE THE COMFORT OF A HOME-COOKED ROASTED CHICKEN. CRISPY ON THE OUTSIDE, TENDER AND JUICY ON THE INSIDE, THIS ROASTED CHICKEN IS SEASONED WITH A SIMPLE BLEND OF HERBS AND SPICES, MAKING IT A TIMELESS DISH THAT EVERYONE WILL LOVE.

Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 4 tbsp olive oil or melted butter
  • 4 cloves garlic, minced
  • 1 lemon, quartered
  • Fresh herbs (rosemary, thyme, and parsley)
  • Salt and pepper to taste
  • 1 onion, quartered
  • Optional: 1 tsp paprika for extra flavor

Directions:

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken inside and out, then pat it dry with paper towels.
  3. Rub the chicken with olive oil or melted butter, making sure to coat it evenly.
  4. Season the chicken generously with salt, pepper, and paprika (if using).
  5. Stuff the cavity with minced garlic, lemon quarters, onion, and fresh herbs.
  6. Tie the legs together with kitchen twine and tuck the wing tips under the body.
  7. Place the chicken on a roasting pan or baking dish, breast side up.
  8. Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  9. Let the chicken rest for 10-15 minutes before carving.
