Ingredients
- 2 cups warm milk
- 1 tbsp sugar
- 1 tsp salt
- 2 1/4 tsp active dry yeast
- 1 3/4 cups all-purpose flour
- 2 eggs
- 3 tbsp neutral oil or melted butter
- Extra butter for cooking
- Red caviar for serving
Instructions
- Prepare the base – Combine warm milk, sugar, and yeast. Let it sit until bubbly (about 10 minutes).
- Make the batter – Whisk in flour, eggs, salt, and oil. Cover and let rise for 1 hour.
- Cook the blini – Heat a buttered pan over medium. Pour a thin layer of batter, swirl, cook until golden on both sides. Repeat.
- Assemble – Stack and top with red caviar. Serve warm or room temp.
Tip: Don’t overfill the pan. Blini should be thin and flexible, not thick and heavy.
