Middle Eastern Flatbread with Roasted Vegetables and Tahini 🌿 🥙

Ingredients:

  • 1 flatbread or pita
  • 1 cup roasted vegetables (eggplant, zucchini, mushrooms, or peppers)
  • 1 tbsp olive oil
  • 2 tbsp tahini
  • 1 tsp lemon juice
  • 1 small garlic clove, crushed
  • Water to thin
  • Fresh cilantro or parsley to serve


Instructions:

  1. Prepare the tahini sauce – Whisk tahini, lemon juice, garlic, and a splash of water until smooth.
  2. Warm the flatbread – Lightly grill or heat it in a pan.
  3. Assemble – Layer roasted vegetables, drizzle with tahini sauce, and finish with herbs.
  4. Serve immediately – Fold, wrap, or tear — however you like.
