Ingredients:
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- 1/4 cup sugar
- 1/4 tsp salt
- 6-8 tbsp ice water
- 4 medium apples, peeled, cored, and sliced
- 1 cup mixed berries (blackberries, raspberries, or your choice)
- 1/2 cup sugar (adjust to taste)
- 1 tbsp lemon juice
- 1 tsp cinnamon
- 1 tbsp cornstarch
- 1 egg, beaten (for egg wash)
- Powdered sugar for dusting (optional)
Directions:
- In a large bowl, mix together flour, sugar, and salt. Add the cold butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and chill for at least 1 hour.
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced apples, mixed berries, sugar, lemon juice, cinnamon, and cornstarch. Mix until the fruit is evenly coated.
- On a lightly floured surface, roll out one of the dough discs to fit your pie dish. Carefully transfer the dough to the dish and trim any excess.
- Pour the fruit mixture into the pie crust.
- Roll out the second dough disc and cut it into strips. Create a lattice pattern over the filling by weaving the strips together.
- Brush the lattice with the beaten egg for a golden finish.
