Honey-Ricotta Toast with Roasted Figs & Nuts ๐Ÿฏ๐Ÿž

Crispy golden toast topped with creamy ricotta, caramelized roasted figs, crunchy nuts, and a drizzle of honey - this is breakfast bliss! Pair it with Zinaโ€™s Wheatberry Salad or Vegan Quinoa Salad for a wholesome, balanced start to your day.


Ingredients:

  • 2 slices sourdough or brioche bread
  • 1/2 cup ricotta cheese (or plant-based alternative)
  • 4 dried or fresh figs, halved
  • 1 tbsp olive oil
  • 1 tbsp honey (plus extra for drizzling)
  • 1/4 tsp cinnamon
  • 2 tbsp mixed nuts (walnuts, almonds, cashews), chopped
  • Fresh mint for garnish


Directions:

  1. Roast the Figs โ€“ Preheat oven to 375ยฐF (190ยฐC). Toss figs with olive oil, honey, and cinnamon. Roast for 10 minutes until caramelized.
  2. Toast the Bread โ€“ While the figs are roasting, toast the bread until golden and crispy.
  3. Assemble โ€“ Spread ricotta over the warm toast, top with roasted figs, and sprinkle with chopped nuts.
