HERE’S THE RECIPE:
Ingredients:
- 8 large sea scallops
- 2 tbsp olive oil
- 2 tbsp butter
- 4 slices of Spanish chorizo (thinly sliced)
- Salt and pepper to taste
- Microgreens or fresh herbs for garnish
For the Herb Oil:
- 1/4 cup olive oil
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped
- 1 clove garlic, minced
- Pinch of salt
Directions:
- Pat the scallops dry with paper towels and season both sides with salt and pepper.
- In a large pan, heat the olive oil over medium-high heat. Once the pan is hot, add the scallops, and sear for 2-3 minutes on each side until golden brown and caramelized. Remove the scallops and set aside.
- In the same pan, add the sliced chorizo and cook for 1-2 minutes until crispy.
- To make the herb oil, combine olive oil, parsley, basil, garlic, and a pinch of salt in a small bowl.
- Plate the scallops and chorizo, drizzle with herb oil, and garnish with microgreens or fresh herbs.
