Grilled beef kofta skewers 🥩🔥

Juicy, spiced ground beef shaped onto skewers and char-grilled until smoky, served over a fresh tomato, arugula, and chili salad. Simple, bold, and full of character.

Ingredients

  • 1 lb ground beef (80/20)
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp smoked paprika
  • ½ tsp chili flakes (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • Olive oil, for brushing


Instructions

  1. Mix – In a large bowl, combine beef, onion, garlic, parsley, cumin, coriander, paprika, chili flakes, salt, and pepper. Mix until just combined—don’t overwork the meat.
  2. Shape – Divide the mixture into 6 portions. Mold each portion onto a skewer, shaping into a long oval.
  3. Grill – Preheat grill or grill pan to medium-high. Lightly brush kofta with olive oil and grill for 3–4 minutes per side, until charred and cooked through.
  4. Serve – Place over a bed of fresh salad or serve alongside your chosen Zina’s salads. Eat hot.
