Ingredients
- 1 lb ground beef (80/20)
- 1 small onion, grated
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp smoked paprika
- ½ tsp chili flakes (optional)
- 1 tsp salt
- ½ tsp black pepper
- Olive oil, for brushing
Instructions
- Mix – In a large bowl, combine beef, onion, garlic, parsley, cumin, coriander, paprika, chili flakes, salt, and pepper. Mix until just combined—don’t overwork the meat.
- Shape – Divide the mixture into 6 portions. Mold each portion onto a skewer, shaping into a long oval.
- Grill – Preheat grill or grill pan to medium-high. Lightly brush kofta with olive oil and grill for 3–4 minutes per side, until charred and cooked through.
- Serve – Place over a bed of fresh salad or serve alongside your chosen Zina’s salads. Eat hot.
