Baked Sweet Potato

All year long, we appreciate sweet potatoes, but October is when they really come into their own. They may provide color and diversity to your meal, are a complete superfood (rich in fiber and vitamin C), and taste great both sweet and salty. Learn how to bake sweet potatoes with these tips & tricks! Pair them with your favorite pasta rainbow salad.

Ingredients

 

    • Sweet Potatoes

    topping ideas:

    • butter or vegan butter
    • sea salt
    • chives
    • dollop of greek yogurt or tzatziki
    • a scoop of guacamole
    • a drizzle of creamy avocado cilantro lime dressing
    • salt and pepper 

     

    1. Place a piece of foil on a baking sheet and preheat the oven to 425 degrees Fahrenheit.

    2. I should poke the sweet potatoes several times with a fork, placed on a baking sheet, and roasted for 40 to 50 minutes, or until they are puffy and tender within.

    3. Season with salt and pepper before serving with your favorite pasta rainbow salad. A complete meal.
